Eat Clean - Tomatillo Shredded Chicken with Rice

My parents are coming over for an anniversary celebration. Mom never wants me to go to any trouble for them. That always makes me laugh. After all she has done to raise me and my three siblings, the least I can do is prepare a meal no matter how much work it is.

Well, her wish is granted with this meal. This impressive dish is simple to prepare and offers an outstanding wow factor packed with unique flavors. Here you are mom - I didn't go to any trouble.

This is a tomatillo 
(Tome-A-tee-oh)

Ingredients
    1 c brown rice, dry
    2 lb. chicken breast, skinless on bone 
    2 tsp cumin
    S& P
    Olive oil
    1 onion, chopped
    10–12 tomatillos (about 1 lb), chopped
    1 medium green bell pepper,  chopped
    1/2 jalapeƱo pepper, finely chopped (or whole pepper if you like more kick)
    1 bunch fresh cilantro, coarsely chopped, divided
    Juice of 3 limes
    4 cloves garlic, minced


STEP ONE:  Add 1 cup of brown rice to 2 1/2 cups boiling salted water. Cover, reduce heat to low and cook for 30-40 minutes until rice is tender. 

STEP TWO:  While rice is cooking:  
Season chicken on both sides with S&P and cumin. Drizzle with olive oil and place on aluminum foil in a preheated 400 degree oven. Roast for 20 minutes.

STEP THREE:  While chicken is roasting:
Saute onion in 1 Tbl oil for 2-3 minutes over medium heat. 
Add tomatillos and peppers. Cover and simmer over low heat for 20 minutes.

STEP FOUR: Once chicken is cooked most of the way through, shred off the bone with two forks. Add to tomatillo salsa. Then add fresh garlic, cilantro and juice of 1 lime. Stir all together, cover and continue cooking on low until chicken is cooked through completely. Just a few minutes for all the flavors to get happy together.

STEP FIVE: Add cilantro and lime to rice and serve along side chicken. Top with sour cream or plain greek yogurt, a sprig or two of cilantro and lime wedges. Black beans are a great addition to this meal.

One of my fond memories of you is that you hold hands. Seems simple. But sometimes I'm sure it's not. Yet, through the good times you hold hands to celebrate. And through bad times you hold hands to be strong and brave. You hold hands while on an evening stroll. You hold hands while taking a drive to the beach. You hold hands at the mall, in the park, at parties and most of all, I recognize that we've always held hands as a family around the dinner table to pray. 

Thanks for modeling a strong and God-centered marriage. Thank you for always loving one another. Thank you for the encouragement you constantly provide. And thank you for holding hands. 

I love you both with my whole heart and I celebrate you both today as we all recognize your marriage of 60 years.
