Eat Clean - Skoozi (a family fav!)

One of the greatest challenges with four children is creating one thing that they all like. For my family, it's SKOOZI. It's a better version of what some have called American Chop Suey.

Using grass fed beef, brown rice, marinara, some veggies and top it with cheese, we have a winner dinner! This is one of my favorite recipes to use left over brown rice,  quinoa or other grain.

I wasn't fond of the chop suey title, and my 13 year old son, Jordan, and I were chatting about that. He suggested we call it SKOOZI based on after my kids would finish their plates, they would say "Excuse me, may I have some more, please" - which got shortened and shortened until it was basically "Skoozi" - that's how the name came about.

I'm sure you have things in your home, food related or other wise, that have their own unique name give by your family. And if you were to say that word in front of someone who doesn't live in your home, you'd get a strange look. Inside jokes, phrases and terms are endearing and some of the threads that hold our family tight.

2 lb. ground grass fed beef (or turkey or chicken)
1 onion, chopped
3 cloves garlic
S&P
1 Tbls. each dried parsley & oregano
2 tsp. red pepper flake (Optional, for kick)

2 cups prepared brown rice
3 cups prepared marinara

optional additions:
peppers, green, red, yellow or orange (add with onions)
mushrooms (add with onions)
corn (add with rice)
zucchini, shredded (add with rice - they'll never know)
substitute quinoa for brown rice


Growing your own makes flat leaf parsley readily available at any time
Unless you're me, who does NOT have a green thumb!

Fresh mozzarella comes packed in water

Fresh basil & flat leaf parsley
Mozzarella
Parmesan

Brown the beef with onions for 3 minutes or so, then add garlic. Add S&P and dried herbs.
Once the meat is almost cooked through, add the rice, marinara and other veggies.
Cook together for a few minutes until all veggies are crisp tender.
Top with cheeses and pop in the broiler for a few minutes until the cheese is bubbly.




Organic brown rice is the most affordable when purchased in bulk
And it's the best for you




Costco has a good assortment of organics, including grass fed beef 
(the correct way cows were created to eat)




This is a crowd pleaser and stretches (as my mother would phrase it).
AND, don't forget, this travels well. Great for lunches.
