Eat Clean - Chi Chi Salad

It's colorful and bursting with flavors and textures.


1 can garbanzo beans, drained & rinsed
1 large cucumber, chopped
1 large tomato, chopped
½ cup black olives, chopped
½ onion, red or white, chopped
1 Tbls red wine vinegar
Black pepper
Italian flat leaf parsley
1 oz. goat or feta cheese

Refrigerate for at least 1 hour - up to 1 day
Serve over lettuces or in wrap(1 cup is 1 serving)
