Eat Clean - Roasted Veggie Pizza

Nothing better than pizza and a movie on your own couch!!

This time, make sure your pizza is not dripping with cheesy grease. Yes, I know, some of you are saying "But that's the best part". Well, I don't disagree, but my body does.

Once you taste a pizza like this, your taste buds, your waistline and your digestive system with scream "Encore!!"

Toss these with EVOO and roast for 20 minutes at 375F:
Onion, sliced
Peppers, sliced
Broccoli, chopped
Cauliflower, chopped
Lightly brush Joseph’s Pita Bread with EVOO
Then top with roasted vegetables
Add fresh spinach leaves – enough to cover pizza
Drizzle EVOO over spinach
And dollop pizza with goat cheese
Broil on low - 2nd rack down - until cheese is melty and pizza is heated through.
Don't walk away! About 6-8 minutes
(1 Pita is one serving)

TIP:  If you don't want to take the time to roast your vegetables, you could saute them quickly in a pan with grapeseed or olive oil.
