Eat Clean - Caribbean Chicken

I've been LOVING the Maximized Living lifestyle. They include all 5 Health Essentials for your journey to better health.

In reading through the Maximized Living Nutrition Plans book, I found this A.MAZING recipe for chicken and I want to share it with you.

This chicken recipe follows their Advance Plan eating plan and uses common kitchen ingredients. And the best part - it's easy!!



On medium heat, in a pan:
2 tbls. olive oil in a pan
1 onion, chopped fine
Saute for 3 minutes

Add:
2 cloves of minced garlic
S&P
Cook for 2 minutes

Add:
1 14 oz. can crushed tomatoes
1 tsp cinnamon
2 Tbls curry
S&P (yes, season every level of cooking)
4 boneless, skinless chicken breasts, chopped
       actually, I used 2 chicken breasts and 6 chicken thighs

Bring to a simmer then bring to LO for 15 minutes until chicken is cooked through.

Add:
1/2 cup coconut milk (unsweetened)
Cilantro leaves

Cook another 5 minutes, then garnish with cilantro leaves and serve.



Serving with or over suggestions:
Brown rice
Quinoa
Broccoli
