Eat Clean - Versatile Crock Pot Chicken

It's happening and I'm so excited! My husband, John, and I have been dreaming and planning this for quite a while and we are on our way. I have to contain my desire to use exclamation points throughout this entire post!!!!!

The new GE appliances have all been purchased and the new floor has been selected. Only a few more steps until our kitchen set is complete and ready for shooting our own COOKING SHOW!

Our current kitchen has the square footage, but was clearly designed by someone who never cooks. So, we've replaced our appliances with a new line from General Electric - new refrigerator, stove, microwave and the dishwasher is being delivered soon.

Next, the floor will be ripped up and a new mega-island and flooring will be installed. I'm in the middle of the dream coming to reality and it feels really good.

Realizing that my kitchen will be fairly unusable during construction, I am searching for all my crock pot recipes - and here is a favorite that can be altered according to the "flavor of the night".

In addition to being versatile, depending on the size of your crock pot, you could have leftovers for lunches - or feed a crowd of hungry kitchen remodelers!

BASIC CROCK POT CHICKEN:

3 lbs. chicken (bone-in or boneless) (breasts or whole chicken)
1 large onion, chopped
S&P
4 cloves of garlic, sliced, chopped or pressed
3 Tbls Bragg's Amino Acid (or low sodium soy sauce)
Cilantro - just the leaves, about 1/4 cup
     Use oregano if you're dinner is more on the italian side
1 juicy lime

Low for 4-5 hours (depending on boneless or bone-in)


FAJITA STYLE:
Shred and serve on tortillas
With grilled or sautéed peppers and onions

ASIAN STYLE:
Serve in chunks with bok choy, brown rice or quinoa

MEXICAN STYLE:
Add 1-2 chopped and seeded jalepenos while cooking
Shred and add a jar of fresh salsa
Serve on tortillas with cheese, lettuce, tomato & sour cream (or greek yogurt)
