Eat Clean - Powerhouse Kale Salad

It's hard to believe that this odd bunch of healthy ingredients
can produce such an outstanding salad!

Ok, fine. I'll eat it. Is there any way to make it a bit more "fun and palate friendly"? SURE!

Simmer in salted water for 15 minutes, add cannellini or garbanzo beans and top with olive oil and a bit of feta cheese! DONE. Simple, Super, Speedy & Smart.

Chop and drop the salad ingredients into a bowl
Top with the amazing blender dressing!!

Here is my version of a raw kale salad recipe that I got from my mother in law. Thanks MOM!


POWERHOUSE KALE SALAD

2 bunches kale, washed, destem and chopped fine
3 Granny Smith Apples, chopped
5 radishes, chopped
1 cup golden raisins


Dressing - add all to a blender:

1/4 cup grape seed oil
juice of 2 lemons
1 tbls minced garlic - World Spice - or 3 fresh cloves garlic
2 tbls tahini
1/4 cup water
6 dates
3 tbls soy sauce (Braggs)
1/2 onion
1 tsp pepper


Pour dressing over salad, toss, then refrigerate over night or a minimum of 4 hours.
Absolutely delish!
