Eat Clean - Veggie Confetti

This recipe was born out of the need to "clean out the veggie drawer" AND get the kids to eat their vegetables. Hopefully, you'll love this method as much as me, that you'll not wait until the zucchini is limp and you can't remember the purchase date of your carrots.

The Line Up:
Zucchini
Carrots
Onion
Yellow Squash
Spinach
Grape seed or Olive oil
Herbs
Salt / Pepper

With my handy-dandy grater from IKEA, I grate all my veggies - except spinach.

Dry the squash a bit on a few paper towels while your pan is heating up.  Press another paper towel over the top of them to remove most of the moisture.

Heat your pan to Med - Med/Hi and don't plan on going anywhere. 2 Tbls. grape seed or olive oil.

Everybody in at once. When the veggies hit the pan you should hear that instant sizzle!
A dash of salt - A pinch of pepper.
Saute for a few minutes.
Add the spinach and herbs.
It doesn't take long at all.


HERBS: My favorites for this dish are Thyme and Italian flat leaf parsley. "WHAT ARE YOUR FAVORITES?

TIP:  Grate your squash and carrots length-wise for long ribbons almost like spaghetti. I've even topped the Veggie Confetti with homemade marinara (Italian gravy).
